Chocolate Chip Butter Cookies
A friend of Melissa's made this for a party in Wyoming - looks easy, sounds good.

2 Cans Rotell tomatoes (any flavor)
2 Medium tomatoes
onions (any kind)
toasted chopped jalepenos (green or yellow)
garlic
spices: (all to taste)
taragon
salt and pepper
oregano
dice all vegetables, mix together, and season to taste. Can control heat by using more or less peppers.

Chocolate Chip Butter Cookies
1 cup butter (no substitutes)
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1 cup confectioners sugar (that's powdered sugar!)
1 cup (6 ounces) miniature semisweet chocolate chips
Melt butter in a microwave or double boiler; stir in vanilla. Cool completely. In a large bowl, combine flour and sugar; stir in butter mixture and chocolate chips (mixture will be crumbly). Shape into 1 inch balls. Place 2 inches apart on ungreased baking sheets; flatten slightly. Bake at 375 degrees for 12 minutes or until edges begin to brown. Cool on wire racks. Yield: about 4 dozen.
