Ingredients
- Crust:
- 1 1/2 cups flour
- 2/3 cup packed brown sugar
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1/2 cup softened margarine
- 1 tsp vanilla
- 2 egg yolks
- 3 cups miniature marshmallows
Heat oven to 350. In large bowl combine all crust ingredients
except marshmallows at low speed until crumbly. Press into bottom of
ungreased 13x9" pan and bake 12-15 min. Remove from oven and immediately
sprinkle with marshmallows. Return to oven for 1 or 2 minutes or until
marshmallows begin to puff. Cool while preparing topping.
- Topping:
- 2/3 cup corn syrup
- 1/4 cup margarine
- 2 tsp vanilla
- 12 oz pkg (2 cups) peanut butter chips
- 2 cups rice cereal
- 2 cups salted peanuts
In largepan heat corn syrup, margarine, vanilla and peanut butter
chips until mixture is smooth. Remove from heat and srir in cereal and
peanuts. Immediately spoon mixture over marshmallow crust. Spread to
cover and refrigerate until firm.
