Coffee Spice Cookies

Cream together:
- 1 Cup Brown Sugar
- 1 Cup Granulated Sugar
- 1 Cup Shortening
Then add: 2 beaten Eggs
Sift together:
- 1 tsp. Baking Powder
- 2 Tbsp. Cinnamon
- 1 tsp. Cloves
- 5 Cups Flour
- 1 Tbsp ground Coffee Beans
Dissolve: 1 tsp. Baking Soda in 1 Cup Cold Strong Black Coffee. Mix together alternately: Creamed mixture,
sifted mixture & coffee mixture.
Add & mix:
1 Cup Walnuts, chopped and 1 Cup Raisins which have been soaked in hot water & drained & cooled.
Dust with some of the flour mixture to avoid sticking. Next, drop teaspoon or larger size dollops
on ungreased cookie sheet, about 1 to 1 ½ “ apart. Bake at 375 degrees for about 12-15 minutes, depending
on size, or until lightly browned, puffy & slightly cracked. Frost with coffee frosting while warm.
COFFEE FROSTING
Sift: 3 Cup Powdered Sugar with 1 heaping Tbsp. Ground Coffee Beans. Add 6 Tbsp. Butter & approximately
1/3 Cup cold Coffee as liquid until you reach a spreading texture. Beat till smooth.
